My Favorite Panfish Recipes

Now that ice fishing is winding down, and with Mother Nature on our side, we may have a few more weeks of pan fishing here in the north! Pan fishing has been very good lately! Frying up your catch is always tasty, but here are some recipes for when you are in the mood to try something a little different!

Pecan Crusted Panfish

2 lbs. pan fish, skinned, serves 4
1 cup breadcrumbs
1 cup pecans, chopped
¼ pound butter, melted
Salt and lemon pepper to taste
Cooking oil, butter or margarine
Arrange the fillets in a well-oiled (or sprayed) 9x13 baking pan. Season with
salt and lemon pepper. Sprinkle generously with breadcrumbs and chopped pecans  Drizzle the melted butter over the crumbs. Bake in a preheated, 300 degree oven for about 20 minutes or until the crumbs are a crusty brown. For extra crusty top, place under broiler for 1-2 minutes.

Panfish Surprise

1 – 1 ½ lbs. panfish fillets
1 small bag of cooked shrimp
1 medium onion, chopped
1 large tomato, ripe but firm, chopped
¼ cup celery, chopped
1 bell pepper, chopped
½ lb. fresh mushrooms, sliced
½ lb. grated Swiss cheese
Olive oil
Lemon pepper
Ararnge fish in 9x13 baking pan. Sprinkle fish with lemon pepper. Sprinkle shrimp on top of fish. In a small skillet add onion, celery, pepper, and mushrooms. Cook until tender. Place skillet mixture on top of fish/shrimp. Top with cheese. Bake for 10 minutes at 450 degrees.

Panfish Appetizer Platter

Skinned panfish fillets
1 package cream cheese
1 TBS sour cream
1 TBS Ranch dressing
Onion powder
Garlic Powder
Cocktail sauce
Old Bay seasoning
Ritz crackers
Steam panfish fillets for 4 to 6 minutes, remove from heat, season with Old Bay seasoning, and cool. In bowl, mix cream cheese, sour cream, Ranch dressing, onion and garlic powder. Spread mixture onto serving plate. Top with cocktail sauce. Add the cooled, flaked fish to top of cocktail sauce. Refrigerate for a short time. To serve, place Ritz crackers around the outside edges of serving plate.
